Yan Yun is a flavor profile typically used to describe Wu Yi rock tea. It’s described as “Lingering aromatics, sweet sensation on the side of the mouth” This tea is made from a Taiwanese Oolong, our tea farmer used the traditional method prepping Yancha to prepare this tea, tiving it a mouthwatering and a vaporous persistent quality.
Due to the small yield of this tea, we only receive up to 2 KG of this tea per season (not guaranteed). The process of producing this tea in a traditional method is long, and extremely labor intensive, we hope when you taste this tea, you can find a moment to slow down and truly appreciate each and every drop.
Tasting Notes: sweet aromatics resembling burnt edges of marshmallow with roasty notes of charcoal
Whole leaves can take a little longer to steep, but the taste more than makes up for it.
Every tea is unique and can be brewed in different ways. The chart below is to be used suggestively as a guide for brewing this tea, we think it's a good place to get started. Steeping time may vary based on your personal taste or on how many infusions have already been done. Experiment with the brewing of your tea to discover its unique character.
Please note: Rinse the tea in teapot with a quick application of hot water, discard the liquid immediately. Add additional hot water to start 1st steeping
